Description: 
This wine is the result of careful observations of the ripening grapes and the realization that the Windbichel site allows for unique aroma formations in the Riesling grapes with great ability for the wines to evolve. On the nose, it convinces with lush aromas such as peach, ripe pineapple and dried orange peel. In the mouth, the wines from this site are an opulent, true dream of expansive juiciness and minerality. 

Grape variety: 
Riesling - South Tyrol Val Venosta DOC 

Production area: 
The grapes grow in the particularly steep, stony Juval south-facing Windbichel site between 700 and 750 meters above sea level. In their highest Riesling site, the grapes ripen in a remarkable microclimate with strong air movements as well as large temperature fluctuations between day and night. For their Riesling, they harvest only the ripest, most aromatic grapes from this site in their own selection process. 

Vinification: 
Before pressing the grape mash, depending on the conditions of the year, they use a certain retention time of the skins with the juice to allow value-giving ingredients to escape. Also for this wine they prefer stainless steel tanks to preserve the site character unaltered. They control fermentation through moderate cooling and store the young wine on the fine lees until just before bottling and another 12 months in bottle. 

Food pairing: 
Recommended with Asian dishes, white meats or simply to enjoy on its own. Greatest drinking pleasure after five to six years. 

Serving temperature: 
12 - 14°C. 

Ageing potential: 
more than 10 years.

An estate winery also lives from strong personalities. The Castel Juval Unterortl Estate Winery in Castelbello at the entrance to the Val Senales has three at the same time: the king of mountain climbing, Reinhold Messner, is the owner, and Gisela and Martin Aurich run it as tenants. Three heads for one estate winery, so to speak. While Reinhold Messner most likely needs no further introduction, in the context of his estate winery it is worthwhile to take a closer look at the Aurichs. They have dedicated themselves to wine and distilled spirits since 1992. In the Castel Juval Unterortl Estate Winery, they are responsible for 30,000 bottles that are produced here year after year: Müller Thurgau, Riesling, Pinot Blanc, and Pinot Noir, whose very particular character is passionately looked after by the Aurichs. As their credo goes, in the end it should be possible to taste the characteristics of the grape variety, the soil, and the microclimate.
