Description: 
Intense straw yellow colour with golden reflections. Intense and persistent on the nose, fine and elegant, white fruits and citrus fruits as well as a hint of Mediterranean notes emerge. On the palate it appears very balanced and fresh, harmonious and finely fruity, good minerality and balanced aftertaste, typical is the hint of bitter almond in the finish. 

Grape variety: 
90% Vermentino 10% Petit Manseng - Costa Toscana Vermentino IGT. 

Production area: 
The vineyards of Gorgaccio and Pascoli Alti, where the grapes come from, are located between two old iron mines; this fact makes the Vermentino even more interesting for its marked minerality, while the proximity to the sea gives these vineyards a particular energy. The freshness and good acidity are guaranteed by the altitude of the vineyards. 
The stony nature, the volcanic origin of the soil and the hot, dry climate put Elba in line with many Mediterranean regions such as Sardinia and Corsica, where this grape variety thrives excellently. 

Vinification: 
After the harvest, when the grapes are fully ripe, a gentle pressing and vinification takes place in a horizontal press. After a static racking, fermentation begins at a controlled temperature; at the end of this phase, after a rough decantation, the wine remains in contact with the fine lees for a few months. Ageing takes place in stainless steel tanks and maturation in the bottle lasts at least three months after bottling. 

Food pairing: 
In addition to classic combinations with the island's seafood and rustic cuisine, Vermentino is ideal with starters of raw fish as well as risotto, especially with asparagus; it also goes well with sweet cheeses of medium consistency and not too mature.

10 - 12°C.
