Description: Ruby red colour with violet hues; intense perfume, with good persistence, fruity notes of currants, blueberries and morello cherries, cardamom and cinnamon. Soft and warm taste, with good tannic texture and return of spicy notes of black pepper in the finish.

Vinification: Cold maceration for two days at around 10°C. to encourage greater extraction of both the typical aromas of the variety and the colour. Vinification in red with periodic punching-down (2 - 3 per day) to ensure a higher content of extracts and tannins. The tumultuous fermentation continues for 10 - 12 days at a temperature of 26 - 28°C. with several 'délestages', especially in the early stages of vinification. After careful racking, with handling of the marc drained only by gravity, malolactic fermentation follows in steel. Maturation in barriques for 8 - 12 months and 6 in bottles.
Food pairing: Risottos, sliced meats and cold cuts, pasta dishes, stewed red meat.
Serving temperature: 16 - 18°C.
Ageing potential: more than 10 years.

Producer: Casale del Giglio Casale del Giglio was founded in 1967 by Dr. Berardino Santarelli, a native of Amatrice, and is located in the Agro Pontino in Le Ferriere, Municipality of Aprilia, in the province of Latina, about 50 km south of Rome.
Compared to other areas in Lazio and other regions of Italy, this territory represented an environment to be explored from a wine-growing point of view. For this reason, the 'Casale del Giglio' research and development project was launched in 1985, authorised by the Lazio Region's Department of Agriculture.
