Ruby red color. Elegant, fine and multifaceted scent of wild berries, withered red flowers, balsamic herbs and licorice. Intense taste, rich, subtle, elegant and balanced, with long aromatic persistence. The Pinot Noir of the Podere della Civettaja is a Tuscan wine considered as a great Italian interpretation of the famous international grape variety, aged for 12 months in barrique and 10 months in cement tanks. It is characterized by an elegant and multi-faceted aromatic range, with hints of red fruit, licorice, dried flowers and many spices. The taste is rich, structured, fine and very long. Wine made as it once was with artisanal methods.

100% Pinot Noir.
Production area:
Tuscany. On clayey and calcareous soil at 500 meters above sea level, with southern exposure. Biological agriculture.
Vinification:
Spontaneous fermentation with indigenous yeasts in open vats of oak and in cement tanks. Without filtration. Aging for 12 months in old barriques, 10 months in cement tanks and at least a further 9 months in bottle.
Matching:
Pasta dishes with different sauces, stewed red meat, roasted or grilled, game dishes and aged cheeses.
Serving temperature:
16 - 18°C.
Ageing potential:
more than 10 years.
